Monday, October 12 — Columbus Day. Plan was EPCOT all day with the laptop. Pixie Dust blacked out for the holiday and I did not catch it until I was at the gate. Denied. Sad-face selfie in front of Spaceship Earth, then straight to Disney Springs.
Hunger hit first, so lunch was Chicken Guy! — Guy Fieri’s chicken spot. Tenders, fried pickle chips, a stack of sauces. Fast-casual, but the chicken and sauces were excellent. Knup 8.2. Would go back.
After that I found a shaded umbrella table by the lake over by the amphitheater / Disney Store stretch and worked for a good hour or two. Signal was solid, vibes were good, and I actually got a lot done. On a nice day, Springs has real work seats; on a scorcher it would not be the same office. I keep notes on that in the Walt Disney World remote-work guide.
Walked a couple more laps with live music going, then ducked into The Cookie Bar at Summer House for two big gourmet cookies — Snickerdoodle plus another for Sarah — and headed home. Knup 8.3 on the cookie stop. Full Summer House restaurant is still on the list for another day.
Knup 7.6 / 10. Rough start at EPCOT, strong save at Springs. Food + laptop block + cookies. Not the park day I planned — still a productive Monday.
